Deep Fried Fish with Homemade Honey Mustard

There's nothing more satisfying than cooking up some fresh fish you just pulled from the lake. Try out this delicious recipe with any light-fleshed, flaky fish. We love using walleye in the recipe, but it's also great for halibut, crappie, smallies, and other light-fleshed, flaky fish. Happy fishing and Bon appétit!

Ingredients

Tempura Batter

  • 1/2 cup flour
  • 1/2 cup cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1 medium egg
  • 2/3 cup ice water
  • 1-1/2 pounds walleye or other flaky fish
  • Oil for frying

Honey Mustard Sauce

  • 1/3 cup honey
  • 1-1/2 cups mayonnaise
  • 1/4 teaspoon freshly ground black pepper
  • 1/4 cup prepared yellow mustard
  • Dash Worcestershire sauce
  • Pinch salt
  • Dash or two Tabasco or favorite hot sauce

Directions

Mix together all of the dry ingredients in a bowl. In a separate bowl, beat egg slightly and mix with water. Sift together all of the dry ingredients in a bowl. Add the dry ingredients to egg/water mixture. Stir only until mixed; mixture will be slightly lumpy. Use immediately. Dip fish into batter and deep fry until golden brown. Drain on paper towels. For extra-crispy fish, dip the fillets in flour before frying. Before serving dinner, mix together all of the honey mustard ingredients until well blended.
