Jim, there actually is a great set of charts showing the vital organs of deer. Go tonbef.org and then to Online Store & Materials, and then "Educational Materials" and purchase the "Advanced Whitetail Anatomy and Shot Placement" charts for $10 plus shipping.
These are extremely accurate and show you exactly where the heart, lungs, and liver of whitetails are located. It doesn't show the angles you need, but there is a CD that does. Go to the Quality Deer Management Association's website atdeerassociation.com then go to their online store and to the Cyber Deer CD. It allows you to put an arrow through a deer at all different angles and see what organs you hit. The price is $14.95 plus shipping.
