Golden Fish & Chips

Ingredients:

1 1/2 lbs. haddock fillets, defrosted
2 eggs, separated
2/3 cup beer
1 cup flour
1/2 tsp. paprika
1/2 tsp. salt
2 Tbsp. butter, melted, cooled slightly
Oil
Cut fish into strips 3 inches long and 1 1/2 inches wide. Dry on paper towels. In large mixing bowl, beat egg yolks until thick and lemon colored. Stir in beer; add flour, paprika, salt and melted butter. Stir until smooth. Beat egg whites until stiff and fold into batter. In heavy skillet, heat oil over medium-high heat until hot. Fry fillets 2 to 3 minutes, turning occasionally. Drain on paper towels before serving.

Beer Batter Fish

Ingredients:
Vegetable oil
1 lb. fish fillets
3 to 4 Tbsp. baking mix plus 1 cup
1/2 tsp. salt
1 egg
3/4 cup beer
Heat 1 1/2 inches vegetable oil in deep fat fryer to 350°F. Cut fish into serving-size pieces. Lightly coat fillets with 3 to 4 tablespoons baking mix. In large mixing bowl, combine 1 cup baking mix, salt, egg and beer, mix until smooth. Dip fillets into mixture, letting excess drip into bowl. Fry, 2 minutes on each side, or until golden brown. Drain.
